                                        Currently the area of food psychology is somewhat new, there are many gaps in knowledge and many areas that have not as yet been researched. Understanding why we eat what we eat is essential knowledge to anyone who works in the area of health and nutrition.                                         COURSE OUTLINE

                                        Food preferences 
                                        The foods we like and want, also known as our food preferences, and are influenced by a number of factors including internal ones such as genetics and our physiology (for example our taste receptors), and external factors such as our cultural background and family life.

                                        Food behaviour; In order to effect a change we need to understand how a behaviour has come about. We need to consider three factors:, the way in which we have gained our food preferences ie. was it learnt or is it innate? Secondly, how long has the behaviour been with us? And, last but not least, how often is it reinforced?

                                        The difference between wanting and liking to better understand why we eat what we eat and how to change unwanted food habits.

                                        Taste receptors Our palate seems able to detect so many subtle flavours in our food and drink, however, there are really only a few distinct taste sensations. Some are innate and others are learnt. Understanding how these occur aids how to work with eating habits.

                                        Taste and food habits looks at why we love fatty and salty food and why children prefer sweet tastes to bitter.

                                        Food taste and food preference looks at why certain tastes give us pleasure and why it can be so hard to alter unhealthy eating choices.

                                        Food choices and decision-making discovers what processing is involved in food choices and how they affect our eating habits.

                                        Food choices and learning covers which types of learning are easiest to 'unlearn' and which are not and how we can assist others to alter their food choices in favour of healthier options.
